Similar to my Smoked Fish Pie recipe except I have added salmon, a white fish and the smoked fish. I like to cook this when I am having guest and makes a lovely Sunday lunch. It would be nice to serve with a salad but tonight I am having about 20 for dinner so I am cooking pea's and carrots to go with it, and it is still winter.
Omega 3 and 6 fatty acids - our body does not produce these essential fatty acids. They are really important for us and helps reduce heart disease, maintains nerves and brain function, builds healthy cells. It comes from fatty fish like Salmon, mackerel and tuna, walnuts and flaxseeds.
Fish also contains - calcium, iron, magnesium, phosphorus, zinc, and selenium.
Three Fish Pie Recipe
serves 6
50 gr butter
75 gr butter
75 gr plain flour or brown rice flour
1 leek sliced in rings thinly
800 ml coconut milk heated
200 ml water - if needed
Himalayan salt / pepper
1 smoked fish fillet - broken into chunks
1/2 salmon fillet - deboned, skin off and cut into cubes
2 white fish fillets - a firm fish is best, cut into cubes
Potatoes, enough for feeding your family for mashing
Butter / milk / 1 tsp whole mustard / parsley
option grated cheese to topping
Method
1 - Cook potatoes, drain, season and mash adding parsley and mustard.
2 - In a large pot - melt 50 gr butter on low and cook leeks with the lid on for about 10 minutes until soft.
3 - Add 75 gr butter to the leeks - melt and add flour, cook on low until grainy. Stirring with a wooden spoon.
4 - Using a wooden spoon and then whisking, slowly pour in warmed coconut milk, adding the 200 mls of water if it is to thick.
5 - Cook for 5 mins on low, stirring. Season with salt / pepper - taste
6 - Add the fish, stir in gently and cook gently. Don't over cook.
Taste and season - the smoked fish is salty
7 - Pour into an oven proof dish or leave in your pot (if it can go in the oven) COOL (otherwise the fish will keep cooking when you put the potatoes on top)
8 - Top with potatoes once cooled. Dob butter on top or cheese if you like
9 - Cook 200 c 30 mins or until brown
Cook leeks until soft with the lid on.

Add your heated milk and cook on low stirring until thick and creamy. Add fish gently and cook on low, try to avoid the fish breaking up. Cook until just nearly cooked.
Cook, drain and mash potatoes, I used agria potatoes.
