If you love meat, you will love meatballs, especially kids. I have used tin tomatoes, the trouble when using acid tomatoes is they need to be sweetened. I will be growing acid-free tomatoes this summer. I have used a grated apple and sticks of carrots to do this. This meal is so quick to make. I cooked rice noodles to go with it and stir fried bok choy.
This makes a great meal for the freezer.
Meat Balls and Apple with Sauce Recipe
serves 5
Meatballs
700 gr good quality beef mince
1/2 cup rolled oats
1 tbsp tamari sauce - naturally fermented soy sauce
1 tbsp worcestershire sauce
4 cloves garlic - chopped finely
coconut oil for frying
Sauce
1 onion chopped finely
5 cloves garlic
800 gr tin tomato's chopped
2 tbsp tomato paste
4 cups beef stock
1 tbsp tamari sauce
1 tbsp worcestershire sauce
1 large apple grated with the skin on
5 carrots - cut into thin sticks
4 tsp rice flour mix with water - for thickening
Method
1 - In a bowl mix all the meatball ingredients.
2 - Roll into small balls - I rolled 22
3 - In a frypan fry the meatball's until brown.
4 - In a large pot soften onions then add garlic. Cook for 1 minute.
5 - Add tomatoes, tomato paste, sauces, beef stock and apple. Cook with the lid off for 20 minutes.
6 - Add the rice flour mixture and the carrots. Put the lid on and cook for about 10 minutes or until the carrots are cooked.
Taste and season
Brown only the meat balls in a fry pan. They will cook in the sauce.
Cook the onions until soft and add the garlic.
Pour in the tomato's, tomato puree, whistorshire sauce, tamari sauce and grated apple.
Simmer with the lid off before add the carrots for about 20 minutes. Then add the carrots and rice flour mix and cook for 10 minutes or until carrot's are cooked with the lid on.
I served with rice noodles and stir fried bok choy.
