Wrap's are a fun meal to eat with a family and friends. The prepared raw and cooked vegetables (mushrooms) are placed in the middle of the table with a selection of bought wraps (gluten) and gluten free wraps. For the gluten free wrap's I used my ''Quesadilla with Refried Beans GF'' recipe. My sister has been making these and freezing them for her lunches instead of bread. But I would suggest you make them fresh and eat or the night before and covered.
These wraps are seriously amazing. It is like eating a crepe. They are soft and hold really well loaded with vegetables.
We used raw red capsicum's, spinach, red onion's, avocado, beetroot, red cabbage, carrots, cooked mushroom's, cheese and chicken. The sauce was mashed avocado's, olive oil, lemon juice and raw garlic mixed.
Tortillas Recipe - gluten free
This recipe can be halved. Just use 1 egg. I make them in the evenings and cover and leave on the bench for the kids lunches in the morning.
It makes 7.
1 1 /2 cups Tapioca flour or you could use Tapioca / corn flour (maize). I found just using the corn flour was not as nice.
6 tbsp coconut flour
3 eggs - beaten
1/2 tsp Himalayan salt
2 1/2 cups or either coconut milk, coconut cream and water, cows milk or almond milk (unsweetened).
Coconut oil for frying
Method
1 - Mix dry ingredients together.
2 - Mix wet ingredients together.
3 - Now pour in the wet ingredients, into the dry and whisk well. This will thicken in a few minutes.
4 - In a heavy base fry pan, on high, melt coconut oil, and pour a ladle of mixture into the pan. Tilting the fry pan, so the mixture spreads in a round circle (just like a pancake or crepe )
5 - Once bubbles appear, flip over. Cook until coloured.
Now fill them with the fillings you love and top with a home made sauce.
Leftovers, was lunch the next day.
Here is another option for your wrap -
I took out some frozen black beans (turtle beans) and placed them in a pot with some vegetable stock, dried cumin and turmeric. I then cooked it while mashing the beans into the stock until thick.
This is now called ''Refried beans''. There is a recipe for these beans under Recipes - search for - quesadilla with refried beans - I added dried turmeric to the black beans for extra nutriention.
In my wrap, I put raw spinach, sauerkraut and refried beans in it. Yum, so good :)
