Carrot, Pumpkin and Coconut Soup - GF

I love pumpkin. It is cheap to buy when in season. The only problem is the skin so tuff and hard to cut. I use a clever normally. But in this recipe I cook the pumpkin whole. So you don't have to cut it until it is cooked.

I served this with kimchi - this recipe in under fermentation. It is a proboctic, puts good bactieria into your gut and it is also high in vitamin C.

Pumpkin - High in Vitamin A and has Vitamin C, B6, Iron, calcium

Coconut milk - Iron, magnisum, Vitamin C


Carrot, Pumpkin and Coconut Soup Recipe

Enough for a lot of people :) or freeze

1 medium pumpkin - leave it whole and placed in an oven 200c until cooked - about 1 hour

1 .5 kg carrots - sliced thinly

2 large onions - sliced thinly

5 cloves garlic or more - smashed and chopped

1-litre vegetable stock or more

400 ml coconut milk

fresh coriander or parsley for garnish

sea salt / pepper

Method

1 - Cook the pumpkin - see note above

2 - In a large pot place onion and carrot with 1/2 cup water. Cook on low with the lid on. Stirring every now and then. When carrots are really soft, add the garlic and cook another 5 minutes.

3 - Place in a food processor or blender and blend until smooth. This can be done in small amounts. Add some of the stock if it makes it easier.

4 - Remove pumpkin and cut in half. Remove the pips and scoop out the flesh. If you cooked it long enough it should be very soft, and will not need blending. 

5 - Put the carrot mix back in the pot, add stock, coconut milk and pumpkin. 

6 - Bring up to the boil. Taste and season. You can add more stock if too thick.

Serve with garnish, and if you have kimchi you can us this as a side dish.

Place a pumpkin whole on an oven tray and into the oven, bake until soft. Checking by poking a skewer into it to see if it is soft inside.

Cook onions and carrots on low a little water and the lid on. Then place into a food processer and blend until smooth.

Place all ingredients into a large pot, whisk (I used a stick blender )and bring up to the boil. Taste and season.
