Raw Blueberry and Nut Treat - GF

When we decided not to use processed sugar in our baking I had to relook at not only the way we eat but I had to modify recipes.

Cutting out processed foods and sugars means you are eating healthy and richer whole foods that are a lot more satisfying. So snacking between meals does not happen so much because we are all fuller for longer with our 3 meals a day. Sometimes you need to treat yourselves for making such a great effort. So here goes - 

Raw Blueberry and Nut Treat Recipe

Makes 12 mini or 1 large

Crust

1/2 cup dried dates - soak in boiling water until cooled and then strain out the liquid.

3 cups walnuts or almonds - blended into crumbs

2 tbsp coconut oil

Method

1 - blend altogether, in a food processor and place into individual moulds (see photo below) or 20'' dish lined with baking paper. Place in a freezer.

Filling - A high power blender or food processor will make the filling smooth and creamy.

4 cups cashew nuts - soak over-night or for a few hours, then strain out the liquid.

1/3 cup honey

1/2 cup coconut oil

5 tbsp lemon juice

Method

1 - Blend in a food processor until smooth.

2 - Pour on top of the base. Place in the freezer.

Topping

3 cups blueberries plus some for topping the cheesecake with.

4 tbsp honey or maple

Method

1 - Blend all the above in a blender.

2 - Pour on top of the filling and top with blueberries.

Two options for making your cheese cake - either individual ones or use a large 20-inch dish with straight sides. The above picture is of - a new plumbing down pipe, that my husband cut into 2 1/2 inches, in height. The plastic strips I put inside is from mylar, you can buy them in craft shops. Sit them on a tray that will fit in your freezer on greased proof-paper.

Base - Blend walnuts and other ingredients for your base, then press into your choice of mould.

Filling - Blend all filling ingredients together and pour onto of the base. The right picture makes the mixture dark but it was not.

Topping - Place berries (mine were frozen) into a blender and blend with the honey. Keeping some aside for the top.

Take out of the freezer one hour before serving, depending on your room temperature. They need to be cold for serving so they hold together because of the coconut oil.
