Pumpkin and Feta Salad - GF

A bowl full of real food. It is better is eat a bowl full of vegetables than a bowl full of fruit.

This is a salad that everyone loves. Let overs make a great lunch the next day. 

Pumpkin and Feta Salad Recipe

This recipe is to be adapted to the amount needed to feed you and your family.

Pumpkin - cut into small cubes for roasting

Red onion - sliced thinly

Fresh spinach leaves

Sunflower seeds

Feta cheese broken up - cows or goats

Parsley - chopped

coconut oil for roasting your pumpkin - this oil can be heated safely at a high temperature.

Sea salt

Option for dressings

- Maple syrup

- balsamic vinegar

- raspberry vinegar

Method

1 - In a very high oven roast pumpkin using coconut oil and sea salt. Roast for colour, don't over cook, you want it firm not overly soft.

2 - Cool and place into a serving bowl then add all the other ingredients except dressing.

3 - Just before serving pour over your dressing - taste - and season again if needed.
