Raw and delicious and that the truth. This is one of my favourite salads. It is refreshing and sooooo good for your health. The dressing is made from extra virgin olive oil and apple cider vinegar.
Beetroot has so many benefits -
1 - The deep purple colour is from phytonutrients. Research has shown the juice has reduced multi-organ tumors in animals and test's are being done for breast, pancreatic and prostate cancer in humans.
2 - The juice lowers blood pressure in a matter of hours. The natural nitrates in beetroots convert to nitric oxide in your body. This helps relax and dilates your blood vessels, improving blood flow and then lowering it.
3 - If you go to the gym or are off for a long walk, drink before, and beetroot juice will allow you to workout longer and boost your stamina.
4 - The juice will help fight inflammation, protect internal organs and improve vascular risk.
5 - Beetroots are high in immune- boosting Vitamin C, fiber and essential minerals. High in potassium and manganese which is good for you bones, liver, kidneys and pancreas.
6 - Betalin pigments in beets help break down toxins - they help to purify your blood and your liver.
Apple Cider Vinegar also has so many benefits -
Only buy Apple Cider Vinegar that has the mother floating at the bottom of the bottle. I buy Braggs brand.
1 - Helps with digestion
2 - Removes warts by using a cotton wool bud straight. Do not go near your eyes with ACV.
3 - Removes sun spots and great as a toner for your skin and a mouth wash(but rinse after because it is an acid) and rinse your hair to give a shiny finish. Dilute 2 water to 1 ACV.
4 - Kills weeds using it straight in a spray bottle.
5 - Drink 2 tbsp ACV warm water - Don't drink it straight - for thrush, feeling a cold coming on or for general health.
Raw Beetroot Salad Recipe
Serve 5 -6
2 grated raw beetroot
4 grated raw carrots
2 cm fresh grated ginger - peel using a teaspoon
2 grated raw apples - with skin on
Option - sunflower seeds
Dressing
1/3 cup extra virgin olive oil
1/4 cup apple cider vinegar
Option 1 tbsp honey - carrot and apples are sweet
Method
Mix raw ingredients and just before serving add dressing.
