Asian - Soya Bean and Chard Salad - GF

 

 

Soya Beans - These are super little gems and are often found in the frozen vegetable section of a super market, but more likely in an Asian supper market ( that is where I get mine) They are in pods, you just pop them out. They are just over $4 for 450 gr.

Nutrition -  High in omega 3, 6 and protein. Also have vitamin A, C, E, K, Folate, Calcium, Iron, magnesium, Phosphorus, Potassium, Zinc, Copper, Selenium.

Chard - (Silver Beet) The vegetable that we all hated - boiled up and butter added. It has come a long way, it may not be as popular as spinach, but it is really easy to grow in your garden and never really dies off. It also tastes better raw than cooked, well that's what I think.

Nutrition - High in Vitamin C and A. Also has Vitamin B6, Iron, Calcium, Magnesium.

Soya Beans and Chard Salad Recipe

2 serving's - serve with tofu, chicken on just on its own.

2 carrot - cut into thin juliennes 

6 large leaves chard (silver beet) - stalks remove, freeze and use for soup -  sliced thinly the leaves

handful of soya beans - remove from the pods

Method

1 - Mix together and 1/2 an hour before serving mix in the dressing.

Asian Dressing

1 tbsp Tamari sauce - naturally fermented soya sauce

2 tsp fresh ginger grated

1 tbsp honey

1 tbsp sesame oil

Mix

Above is chard or silverbeet and the soya beans in their pods (frozen)
