Fruit Cake - Gluten free and processed sugar-free

Moist and amazing :) Although it is high in fructose, a slice could be your fruit for the day.

To make a cake with no processed sugar, no butter and no oil is really different. But its great. This is my favourite fruit from now on. So easy.

 If you have run out of eggs or can't eat eggs make up  flax seed egg or chia seed eggs.

Recipe for flax seed or chia seed egg

1 egg =  1 tbsp flax seed or chia seed to 3 tbsp water

Mix and leave for 15 minutes.

Fruit Cake Recipe

20 cm round cake tin, I use the one with a hole in the middle because it cooks faster. Or use just a 20cm round cake tin without the hole - just cook a little longer.

Grease the tin and place baking paper at the bottom.

500 gr dried fruit - I have just used sultanas.

440 gr tin pineapple crushed or cubes - chop up a little smaller - Make sure it is pure pineapple no added sugar.

1 /2 cup water

1 1/2 cups brown rice flour - or you can use 1/2 brown and 1/2 white rice flour

1 tsp baking Powder

1 1/2 tsp baking soda

2 tsp cinnamon

1 tsp xanthan gum - this is to replace the gluten, in normal flour. (the glue)

2 eggs - beaten

Pinch of sea salt

Method

1 - In a pot place the dried fruit, water and tin of pineapple, bring up to the boil with a lid on and boil for 1 minute. Remove and cool

2 - Mix dry ingredients together.

3 - Mix into the dry ingredients the eggs and everything else. 

4 - Pour into  your cake tin.

Bake 160c for 40 - 60  minutes or until cooked.

I used pineapple chunks because that is all I had. But the crushed pineapple is best.
