Cauliflower Tabbouleh Recipe

1/2  large cauliflower riced in a food processor

7 kale leaves - washed well and sliced thinly

Dressing

1/2 cup currants

handful mint sliced thinly

3 cloves garlic crushed

1 orange grated zest and juice

4 tbsp olive oil

Method

1 - Mix cauliflower and kale leaves together.

2 - Mix dressing ingredients together.

3 - Mix all together. Taste and season.

Cauliflour is raw and placed in small batches in the food processor, blend until it looks like rice.

Kale has been picked from my green house. Currants missing from the photo. I doubled the recipe.

I added currants at the end and served it with ''Slow cook spicy leg of lamb''  recipe under ''Mains red meat''
