Beef Soft Taco - GF

Soft Taco's are so much easier to eat. Don't wait till an hour before ready to serve to make all of this. Read through the recipe and prepare the ingredients during the day or the day before.

This is a great family or friends meal. Lots of talking happens around the table as everyone makes their own, and even better NO GLUTEN so no WHEAT BELLY at the end. :)

 

Tomato salsa - this is a smooth sauce and  kids would not know how many vegetables are in this. I usually make about 4 times or more this recipe and freeze in bags for my next taco's.

Refried beans -  Buy dried beans because it is cheaper. Soak overnight, the next day cover with fresh water and simmer for 50 minutes or until tender. I used black beans in this recipe because that is all I had in the freezer. I usually soak about 4 bags of dried beans and then cook them, then they go into bags into the freezer. Great for meatless taco's.

Taco's - only use Masa Harina flour. This picture is the brand I buy. It contains 7 cups. You can make, roll, and freeze your taco's. Just reheat in a pan or oven. But don't let them dry out or get too brown.

Tabasco sauce - we like to add this for extra heat at the end.

 

 

Beef Soft Taco's Recipe

Serves 5

Grated cheese for topping at the end.

Soft Taco's

makes 16 small taco's

4 cups masa harina's flour (easy to find in the supermarket)

2 cups water - and maybe a little more

2 tbsp olive oil

Method

1 - Mix flour, water and oil together to form a ball that is not sticky or dry. Cover and leave for 10 minutes. 

2 - Divide into 16 balls, roll into rounds. A taco press works really well, and worth buying if your are going to make  this a lot.

Refried Beans

400 gr soaked and cooked brown beans

1 3/4 cups Vegetable stock

1 tsp ground cumin

Sea salt

Method

1 - Place beans, cumin and stock in a pot, simmer and mash beans as they cook until it is thick, taste and season.

Tomato Salsa

1 onion chopped finely

6 large garlic cloves chopped

2 cups finely chopped carrots

1 tsp cumin

800 gr tin chopped tomatoes

Coconut oil for frying

Method

1 - In a pot heat and add oil, cook on low the onion with a lid on.

2 - Add carrots, cumin and garlic cook with a lid on until carrots are cooked. Stirring every now and then.

3 - Place in a blender with the tomatoes and blend until smooth.

Taste and season - serve warm so place in a pot when ready to serve.

Beef Mince

1 kg Beef mince

1 tbsp paprika

1 tsp ground red pepper  or more for heat

1 tbsp ground cumin

3 garlic cloves

1 large onion chopped

Sea salt / pepper

Method

1 - Brown the mince.

2 - Add the onion and cook for 5 mins.

3 - Add the garlic and spices cook for 3 minutes.

4 - Add the refried beans.

Taste and season,   heat when ready to serve.

Cabbage Salad

Cabbage sliced finely

1 red onion sliced finely

Method

1 - Mix, cover and place in the fridge.

 

Serve - salad, mince, salsa and then cheese. For those that love it hotter add Tobasco sauce.
