Roasted Garlic and Mushroom - Spaghetti Squash -GF

For those of you how have never bought a spaghetti squash, now is your chance to try. They are delicious and so easy. You just halve them, season the halves and place them upside down on a tray and bake. Once soft, using a fork, turn your squash into spaghetti.

Roasted Garlic and Mushroom - Spaghetti Squash Recipe

1 spaghetti squash

1 onion - chopped finely

2 garlic whole bulbs - chop tops off( don't pull apart) sit them in tin foil and drizzle olive oil over and close the tin foil, roast in the oven until soft with the squash. Once soft, using a towel so you don't burn your hands squeeze out the garlic.

800 gr chopped tomatoes in a tin

500 gr mushrooms - sliced

1 cup tomato puree

2 tbsp honey

1 tsp thyme

cheese to top the squash - I used feta

Olives are an option

Sea salt / pepper

Coconut oil for frying onions

Olive oil for garlic

Method

Oven 200 c

1 - Cut squash lengthways, take out the pip's and then dribble olive oil over it and season.

2 - Place squash upside down in an oven dish. Bake for about 1 hour or until soft. Also roast your garlic bulbs at the same time.

3 - In a large pot heat coconut oil. Add onion and cook with the lid no, on low temperature until soft.

4 - Turn up the heat and add mushrooms and fry for about 2 mins then add tomato puree, tomatoes, herbs, honey and roasted garlic. Cook with the lid on, at a low temperature for about 20 mins. Then taste and season.

5 - Take out the squash and using a fork, scrape the squash into spaghetti leaving it in its shell.

6 - Now mix the mushroom mixture into the spaghetti.

7 - Top with cheese and olives and bake until cheese is melted (feta does not melt) or there is some colour.

 

 

Once the squash is soft, using a fork scrape the flesh. Easy.

Once the onions are cooked you add the mushrooms, tomato puree, herbs, honey.

Now adding the tin of tomatoes and then lid on to cook.

Mixing the tomato mixture, into the spaghetti then you top with your choice of cheese and olives if you would like.

Bake in the oven 200 c until either the cheese has melted or it is all warmed through.

Slice and Serve

This is another option - mushrooms and kale topped with grated tasty cheese and sun dried tomatoes and olives.
