When I was a teenager, my mum went to Chinese cooking classes for a few weeks at the local high school. I remember nearly every dish she learnt to cook. They were seriously so delicious. This recipe is not the exact one, but it is close. I have a few different Asian flavouring in my cupboard, and even though I am against processed foods, the ones I buy usually are with no additives, organic and fermented naturally. You just need to read the label.
You can prepare this recipe and place it in the fridge, and then cook it later.
Honey, Soy Chicken Recipe
6 - 8 chicken thighs with the bones in
Sauce
4 cloves garlic smashed and chopped
4 tbsp tomato sauce, homemade is best
1/2 cup brown rice malt syrup or honey
1/2 cup tamari sauce - gluten free, naturally fermented soya sauce
2 tbsp rice wine vinegar
2 tbsp grated ginger
2 tsp sesame oil
2 tsp cornflour
Coconut for frying
Brown rice and Vegetables
Method
1 - In a heavy base fry pan melt oil and brown your chicken pieces, a few at a time, skin side down first. Then place in an oven dish.
2 - Mix all the sauce ingredients together, then pour on top of the chicken.
3 - Cover with tin foil, store in the fridge until ready to cook or cook now in your oven for 30 mins.
4 - Remove tin foil, and cook and for another 10 minutes.
Serve on rice and stir fry vegetables
I stir fried quickly a selection of vegetables.
