Healthy filled Tortilla's - GF

This is my new favourite lunch. Yum, I am in love with Masa harina flour. :)

Making your own Tortilla's is really easy. 

Using Masa harina flour - is a traditional flour used to make tortillas. Field corn or maize is dried and then treated in a solution of lime and water. This loosens the hulls from the kernels and softens the corn. The lime reacts with the corn so that the nutrient niacin can be assimilated by the digestive tract.

The soaked maize is then washed, and the wet corn is ground into a dough, called masa. It is this fresh masa, when dried and powdered, that becomes masa harina.

These tortillas are fried in a dry fry pan.

 

Healthy filled Tortilla's Recipe - gluten free

Serves 1

1 cup Masa harina flour

1/2 cup warm water

1/2 tbsp olive oil

Filling - option, use any vegetable from the  list below enough to fill 3 small tortilla's

mushrooms - sliced

capsicums - sliced 

red onion - sliced

leek - sliced

tomatoes

dried mixed herbs or dried thyme

lettuce - to add later into the tortillas

1 tbsp per tortilla - sour cream

Method

1 - Mix flour, oil and water together - it needs to bind and not be dry or sticky.

2 - Roll together 3 balls, rest for 5 minutes.

3 - In a fry pan heat 1 tbsp oil, and fry until cooked the vegetables and herbs, stirring.

4 - Roll out your dough until round and thin.

5 - Remove vegetables, place into a bowl and add sour cream - taste and season.

6 - Wash and dry fry pan, heat the pan on medium and fry your tortilla's on at a time, turning after it has slight brown patches. Fold in half, gently while warm and cover with a clean tea towel.

7 - Place lettuce leaves then vegetable mix into the tortilla's.
