Berry Muffins - Gluten Free

These delicate muffins, are full of nutrition. Made with ground almonds, they are high in protein. They are even nice and moist eaten the next day.

You will not find any of my recipes over sweet. This is because our sugar craving has gone. You soon get use to foods with no processed sugar. So much better for your health. :) Honey is still a sugar, just a natural sugar, we still have to be careful how much you have each day.

Apple cider vinegar is used in this recipe, this is because vinegar is used to react with baking soda, which starts a chemical reaction needed to produce  carbon dioxide and give the batter a lift as they bake.

 

Berry Muffins - Gluten Free Recipe

Oven 180c - muffin tin with grease proof paper cut into squares for each muffin, no need to grease the tin.

Makes 8

2 cups ground Almonds

1/2 tsp baking soda

1/4 cup olive oil

2 eggs - beaten

1/4 cup honey - runny

1 tsp apple cider vinegar

1 cup frozen berries - cut up any large berries

Method

1 - Mix honey, eggs, vinegar, olive oil, and baking soda together.

2 - Place the ground almonds in a large bowl,  fold the wet ingredients into the dry ingredients. 

3 - Fold in the berries.
