Date Syrup -GF

This recipe is high in fruitose - it is for a treat only.

A lot of my recipes have honey in it for sweetening, you may like to try some Date Syrup instead. It is naturally sweet and taste's great. Keep it in a jar in the fridge and use it on waffles, pancakes, in your baking, and hot chocolates (made with cacao powder)

After making this syrup, you are left with a date paste. protein, but its better to use up the paste, than throw it away. Recipe below for ''protein balls''

Doubling the recipe maybe a good idea

Date Syrup Recipe

2 cups dried dates

5 cups water

Method

1 - Place dates and water in a pot and simmer until there is about 2 cups of liquid left, then remove dates with a slotted spoon, and put into a sieve, press as much liquid out of them as you can. 

2 - Keep simmering the liquid, reducing it until there is 1 cup left. Place into a jar and into the fridge.

3 - What is left of the dates, is called ''date paste''. Put aside and cool, ready to make into protein balls.

 

Protein Balls 

These are not very sweet because, all the sweetness went into the syrup, adding currants will sweeten it up.

makes 18 - 20 balls

1 cup date paste

3/4 cup almond meal

1/2 cup finely chopped nuts - walnuts, hazelnuts or any type or currants.

3 tbsp chia seeds

2 tbsp ground linseed

2 tbsp cacao

coconut for rolling

Method

1 - Mix all the ingredients together roll into small balls. Then roll into the coconut. 

Place into a container in the fridge.
