Making your own curry paste, means you don't have to buy it in jars with all those preservatives.
Chillies - nutrition - There is some much nutrition in chillies - Vitamin A, B6 and a huge amount of Vitamin C, potassium, iron and more. So it looks like, the more chillies you add, the hotter it is, the better it is for you.
Red chillies can easily be grown in summer. Once ready, pick them and place them in the freezer. You can buy them in Asian supermarkets frozen.
Ginger - nutrition - omega 3 and 6, calcium, Vitamin C, potassium and more
Garlic - nutrition - Potassium, Vitamin B6, magnesium, Iron and loads of Vitamin C.
You just use what you know your family can cope with. It can be used in fish cakes, Vegetable, Chicken or beef red Thai curries etc.
Store in the fridge or freeze in ice cube containers.
Red Curry Paste Recipe
30 Red chillies - deseeded, and chopped - I left the seeds in them, but it makes they very hot. I bought mine in an Asian Super Market, and I keep them in the freezer.
3 Shallots - chopped finely or 1 onion
6 cloves garlic - smashed and chopped
2 tbsp fresh ginger - peeled and chopped finely
3 lemon grass stalks - chopped - Asian shops have this, I store mine in the freezer.
Bunch fresh coriander if it is in season
10 Black peppercorns
2 tbsp ground turmeric
1 tsp shrimp paste - this is in the supermarkets or Asian shops
2 tsp coriander seeds, roasted in a dry fry pan
2 tsp cumin seeds, roasted in a dry fry pan
2 tsp Himalayan salt
4 tbsp Olive oil
Method
1 - Place all except the oil into a food processor or blender. Blend into a paste.
2 - Slowly add the oil as the motor is working.
3 - Put into a clean jar and store in your fridge.
My chillies and lemon grass are from my freezer.
If your blender is not very powerful, use a food processor or a mortal and pestle.
