This is seriously an amazing meal. You can freeze it, so make twice as much for another week. I make my own tortilla's.
This is where you get the kids involve and give them one of the three recipes, then bring them together, and you end up with a great meal.
I use an Indian flour called Atta flour. It is a whole wheat flour.This flour is used to make chapati, roti and naan breads (flat bread). It is a medium wheat, (not a hard wheat, that has high gluten) it is strong and can be rolled out very thin, without pulling back when you roll it. It is high in protein, but less in ''bread forming gluten'' so the bread does not rise as well.
Have you ever made tortilla's with plain white flour and it just springs back when you roll it this flour does not. I bought it from the supermarket. Unfortunately, I had to by 10 kg's, but it was not expensive.
Nutrients in Atta flour - Vitamin A,E,k B6,Thiamin, Riboflavin, Niacin, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, Manganese, Selenium and Omega 3 and 6.
I was opp shopping recently and came across a ''Nova'' roti maker. I did not know they even existed. I bought if, of course (I love gadgets) and I honestly have used it so many times. The other night I made 30 Tortilla's and cooked it on the roti maker. I have made naan bread as well.
You can also just use a frypan.
Creamy Mushroom Enchilada Recipe
You need to make - Tortilla's, mushroom filling and the tomato sauce that goes on the base of your dish and then spread over the filled tortilla's, finished by grated cheese.
Filling
1 Onion chopped finely
50 gr tbsp butter
50 gr plain flour or rice flour
2 cups vegetable - warmed
Handful of mixed fresh herbs - thyme, parsley / or 1 tsp or each dried herbs
1 cup sour cream
1 cup grated cheese to go on the finished dish, to then be grilled.
500 gr sliced mushrooms
Himalayan salt and pepper
Filling Method
1 - Gently fry the onion until soft. Add mushrooms and herbs and cook for 5 minutes with the lid on.
2 - In a pot make a white sauce, melt butter and add flour. On a low-temperature stir with a wooden spoon every now and then, so it does not burn, cook for about 3 minutes.
3 - Slowly whisk in, warmed stock until it is smooth. Cook on low with the lid off, stirring every now and then for 5 mins.
4 - Add the sour cream and the mushroom mixture.
5 - Taste and season, and then cool.
Tomato Sauce Recipe
1 cup tomato paste
1 onion- chopped finely
4 garlic cloves - smashed and chopped
2 tsp cumin
2 tsp coriander
4 cups chicken stock
3 tbsp honey
2 tsp cornflour
Method
1 - In a blender, place all the above ingredients and blend until smooth.
2 - In a medium size pot, pour in the sauce. Cook on low with the lid on, simmer for 30 minutes.
2 - Taste and season.
Tortilla Recipe - option gluten free below
Makes 6 - freeze leftover 2.
3 cups Atta flour or plain flour
1 tsp salt
1 tsp baking powder
1/3 cup olive oil
1 cup warm water
Method
1 - Mix the dry ingredients together and stir in the water and oil, mix until it forms a ball.
2 - Rest for 20 minutes.
3 - Roll into 6 balls weighing about 200 gr
4 - Using a rolling pin, roll into round circles. Cover and rest for 10 mins.
6 - Store leftovers, covered or in the freezer with greaseproof paper in between.
Gluten Free Option - Tortilla's
1 cup Masa harina flour
1 cup warm water
1 - Mix together and rest for 10 mins.
2 - roll into 3 balls and then roll into flat rounds.
3 - Fry in a dry fry pan until slightly brown, don't over, cook it otherwise it will crack. Turn over.
Assembly Your Enchilada dish.
Oven 200c
1 - In an oven dish, pour some tomato sauce in the base of your dish.
2 - Warm each tortilla, so it is pliable, spoon your mushroom mixture in the middle of one tortilla and roll up, placing the joint side down on the sauce. Repeat until the dish is full.
3 - Pour the rest of the tomato sauce on top. Cover with tin foil.
4 - Bake for 20 mins or until the filling is hot. Remove the tin foil and spread grated cheese on top.
5 - Place back into the oven, and bake until the cheese is bubbling.
Serve with a salad of green vegetables.
