Upside Down Almond and Fruit Dessert - GF

This is a lovely dessert, that is really light to taste. Serves 10, and is very healthy.

I used a jar of my bottled apricots, ( that has no sugar added to it) but you could use any cooked fruit, just drain it well.

Serve with yogurt or custard.

Upside-Down Almond and Fruit Dessert Recipe

1 3/4 cup Ground Almond

1/4 tsp Baking soda

1 tsp apple cider vinegar

3 eggs, beaten

1 tsp vanilla or almond extract

2 tbsp coconut oil

2 tbsp honey

Fruit - cook and drain, 

Method

Oven 175c 

1 - Lay your cooked fruit on a lined pie tin, with the nice side of the fruit facing down.

2 - Melt oil with the honey

3 - Mix ground almond. baking soda and salt.

4 - Mix egg, extract and apple cider

5 - Mix altogether and pour on top of the fruit.

6 - Place in the oven for about 25 mins

Sprinkle with cinnamon and serve with yogurt or custard.
