Besides the fact its is a snowy day here, I love a spicy dish in Winter. I have already posted a Moroccan Chicken dish, which our family love, this dish is also a hit.
Chickpeas - Gluten free and a high source of protein, fibre, Iron, vitamin B6 and Magnesium.
The cheapest way to buy chickpeas is dried.
1 - Soak dried chickpeas overnight in a large bowl of water. ( make sure the water level is way above them as the will soak up a lot of water )
2 - Drain of water, place into a large pot and cover with fresh water. Simmer for about 50 mins or until tender. Drain and cool.
3 - Measure out what you need and place the rest of the chickpeas into freezer bags for next time.
You can buy cooked chickpeas in tins, but it is more expensive.
Lay flat in the freezer until frozen, then they won't stick together.
Turmeric - Nutrition - Very high in Iron, Vitamin B6, Magnesium, Vitamin C, and also has Calcium and Potassium.
Moroccan Fish Stew Recipe
Serves 10
2 tbsp coconut oil
2 onions, thinly sliced
4 cloves garlic - chopped
1 tbsp grated fresh ginger
1 tbsp Turmeric
1 tbsp Ground Cumin
1 cinnamon stick or 1 tsp cinnamon powder
800 gr chopped tomatoes
1 kg firm white fish, cut into pieces
Himalayan salt / Pepper
800 gr Chickpeas - see above on how to soak and cook dried.
2 tbsp honey
2 cups water
Cooked brown rice
Method
1 - Heat oil and on low fry onion until soft, with the lid on.
2 - Add garlic, cumin, ginger, turmeric and cinnamon, cook stirring for 2 mins
3 - Add tomatoes and water and cook for 10 minutes.
4 - Add the fish, honey and chickpeas and cook until the fish is just tender.
5 - Taste and season.
Serve garnished with Coriander leaves on rice.
