I keep these biscuits in the freezer. Only because I want them to last as long as possible. But now that I have confessed this, my family will be running to the freezer as they read this. They are so good, made from ground almonds and seeds and more nuts. On my page ''Soaking'' I talk about soaking your seeds and nuts over night, you then strain off the water and lay them on a tray for the nuts and a tray for the seeds. Place in the lowest setting in your oven, mine is 50c until they are dried out. By doing this, you can now absorb the full nutrition from them. They also taste amazing.
Ground almond (almond meal) - Almonds are a stone fruit.They are packed with protein, vitamin's E and B, magnesium, copper, potassium, phosphorus, iron, calcium and fibre.
Chewy Nutty Biscuit Recipe
Makes 13 biscuits
2 cups ground almonds
1/2 tsp Baking soda
6 tbsp brown rice malt syrup or honey
4 tsp Coconut oil - melt
1 tsp Vanilla extract
1/4 cup Mixed nuts (chopped) and seeds
Method
1 - Add honey and vanilla to your melted oil.
2 - Mix ground almond, salt and nuts and seeds together.
3 - Stir in the baking soda to the oil mix.
4 - Pour the liquid into the dry ingredients, mixing. If it is too sticky, add a little more ground almonds.
5 - On a tray lined with greaseproof paper, spoon tablespoons of the mixture on the tray.
6 - Bake at 175c for 10 - 15 mins, or until lightly golden on the base of the biscuits.
