Asian flavoured Carrot Soup - GF

It is easy to make the same style of soup every winter. But with all the amazing ingredients we have, why not try something a little different. 

First, please try and make your own stock. It is so simply. Make heaps and freeze it in small bags. Never run out, make more before you do. You will be doing your  health and your families health a favour. See my page on ''Stocks Sauces''

Don't forget you can freeze soup. This recipe makes a lot, but like I say, why make enough for one night, when you can make enough for another night.

Asian flavoured Carrot Soup Recipe

Serves 5

Stock

10 cups Vegetable or Chicken stock - add to this 2 star anise, 2 bay leaves, 2 cloves garlic, small piece fresh ginger - Simmer 30 mins

The rest of the ingredients - 

7 large carrots, chopped

1 tbsp ground coriander

1 tbsp ground cumin

1 tbsp fresh ginger chopped finely

1 onion, chopped finely

2 oranges, juice only

Sea salt / pepper

Method

1 - While your stock is simmering, in a large pot, heat oil on low and gently fry onions, until soft.

2 - Add ginger, and spices, cook for 3 mins, stirring. 

3 - Add carrots, cook with the lid on for 5 mins.

4 - Strain your stock, and add the stock to the carrots, with the lid on, simmer until very tender.

5 - Add the orange juice, taste and season and now cool the soup

6 - Blend soup in small batches, or use a stick blender. Which ever makes it really smooth.

Garnish with either fresh coriander, parsley, sliced spring onion or coming up soon my recipe for tomato relish - fermented.
