I love coconut and I love dark chocolate. So together they make a delicious combination. These make a nice present for someone's birthday or party food. Remember the higher the percentage of cacao in your chocolate, the less sugar is added to it.
Coconut Chocolate Delight Recipe
makes 33
I used mini muffin tins. Lay two sheets of glad wrap, side by side, on top of the tin, see photo below.
3 cups dried coconut
1/2 cup coconut oil
pinch salt
4 tbsp honey
1 tbsp vanilla extract
large block 80 % chocolate
Method
1 - Mix all together and spoon into the lined mini muffin tins.
2 - Place in the freezer or fridge until set.
3 - Melt chocolate in a bowl over simmering water, dip each one into the chocolate and place on greaseproof paper, then into a cool place until set.
