Milk Kefir

I was given my milk kefir grains at the ‘’Riverton Harvest Festival ‘’ That is how you will usually get the grains. The other way is dehydrated which you can buy online or at your local health shop. Kefir grains can either be water or milk. They are gluten free.

Milk kefir is rich in beneficial bacteria, phosphorus, vitamin K, biotin and folic acid. Basically they are a probiotic that puts good bacteria into your gut. If you have a lot of stomach problems you should try this.

We have it regularly as part of our diet for our health. I use it in smoothies, waffles, pancakes, baking, and anything that needs milk. Yoghurt is really good for you but this is even better.

Milk Kefir Recipe

1 - Place grains in a clean jar and add 1/2 cup milk, cover with glad wrap making little holes on the        top. leave on the kitchen bench at room temperature. You will know when it is ready, the culture      will thicken and have a pleasant sour smell.

2 - Now pour it through a sieve into a bowl. 

3 - Wash the grains with fresh water and place back into a clean jar. Repeat the process. As your               kefir grows and multiplies you can add more milk and you can also give some to someone else.

4 - Now use the kefir milk in your smoothies or you can drink straight.

BEST WAFFLES EVER Recipe     (topped with yogurt, blackberries and honey) - made with milk kefir.

2 cup flour

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

6 tbsp melted butter

2 eggs mixed

2 cups milk kefir / topping up with regular milk

Method

1 - Mix dry ingredients together, in a well in the middle pour in the wet ingredients.

2 - Beat until smooth. Rest for 20 mins before using.
