My daughter Jessie made this one. It taste's amazing. It's really rich in taste. We make it as a special treat. We froze half of it for another time. The pastry is homemade and really easy to make.
Cranberries are high in Vitamin A, K, C, Omega 3, 6, Magnesium, Phosphorus and Potassium
This recipe is for the Pastry, Cranberry sauce and the Chicken filling.
Chicken, Cranberry and Camembert Pie Recipe
Filling Ingredients
coconut oil for frying
2 clove garlic smashed chopped finely
800 grm chicken breast skinned and diced
100 gr butter
100 gr plain flour
800 mls warm milk or almond milk
2 tsp mustard seeds
1/2 tsp ground black pepper
1 tsp Himalayan salt
1/2 tsp nutmeg
2 tsp mixed herbs
8 tsp cranberry sauce that has very little sugar and no preservatives if you can. Recipe below for homemade.
8 or more slices Camembert cheese
Milk for glazing pie
Method for filling
1 Melt 1 tbsp coconut oil and add diced chicken and thyme, turn up the heat to medium, cook , stirring often, just before its cooked add the garlic and cook for 1 min. Chicken breast can easily overcook.
2 - Heat milk in a pot with mustard seeds.
3 - In another pot melt butter, stirring with a wooden spoon, add flour. Cook flour on low, stirring for about 3 mins, don't let it go brown.
4 - Slowly stir, then whisk in warm milk, mix well until thick and smooth,
5 - Cook for about 5 minutes on a low temperature don't brown. Stir often. Season with salt and pepper, taste
6 - Add cooked chicken to the white sauce and stir. Pour into a bowl, cover and cool in the fridge.
7 - line pie tin with greaseproof paper. Divide the pastry in two, roll one for the base and one for top (if making one pie)
8 - Line the tin with greaseproof paper and place the base in dish, fill with chicken filling, spread cranberry sauce on top then lay cheese on top
9 - Dampen edge with water around the edges, then top with a lid, push the edges together and trim.
10 - Brush with a milk glaze and use a fork to prick holes on top
11 - Bake 200 c for 30 min or until golden brown.
Pastry
500 gr plain flour
400 gr butter cubed
pinch salt
1 cup sour cream
Method for Pastry
1 - In a food processor blend flour, salt, butter
2 - slowly add sour cream until a ball forms, remove, cover with plastic wrap and place in the fridge for 20 mins
Cranberry Sauce
300 gr frozen or fresh cranberries
1/2 cup water or orange juice
1/2 cup honey
Method
1 - In a pot, simmer on low the cranberry mixture until it thickens.
You can add 1 tsp cornflour mixed with a little water, to thicken it.
Cool - this can be frozen and used for pies and pizza's
