Gluten Free Bread

 

I try to only eat Gluten Free bread. If I don’t buy it I make it. It's easy and I would always slice and then freeze in bags. Like most GF bread, it is better toasted but eating it when it comes out of the oven is best.

Flax seeds are one of the most nutrient-dense foods. They manage cholesterol, diabetes, cardiovascular, hot flashes, great skin and hair. They have high amounts of omega 3 fatty acids, antioxidants and fibre.

Gluten Free Bread Recipe

 makes 2 loaves

- if your don't have a warm place to rise your dough, turn on your oven to low while your are putting ingredients together. Then turn your oven off and place your tins in the oven, your dough should rise nicely.

2 cups seeds - see my page on ''Soaking'' I use sesame seeds, flax seeds and sunflower seeds.

or Option - poppy seeds and ground LSA ( ground linseed, sunflower and almond)

Plus extra seeds for the top of your loaves.

5 cups all-purpose GF flour -  warm your flour in the oven for a few mins, it helps with the rising.

1 tsp sea salt - if there is no salt in your flour mix

2 cups  milk or 1 cup milk and 1 cup warm water

4 tsp dried yeast

4 tsp coconut sugar or stevia

90 gr butter - melted

4 large eggs - mixed well with a fork

 

Method - 

1 - Line two bread tins with greaseproof paper. Don't be fussy, just lay one piece inside.

2 - Heat milk to blood temperature. Just warm.

3 - Sprinkle over the milk -  yeast, and sugar, stir a little, leave for 10 mins in a warm place. It should by then be a little frothy.

4 - Melt butter in a small pot, don’t let it get too hot.

5 - In a large bowl put in flour and (salt) and mix.

6 - Pour into the flour the milk mixture, eggs, butter and seeds.

7 - Mix until smooth about 2 mins.

8 - Pour into your two tins and press some extra seeds on top.

9 - Place into a warm oven,( that is not on)  leave for 30 mins or until risen to the top of the tin. (If you leave it too long it will over rise and cause big air bubbles in your bread).

10 - Cook at 180 c for about 50 mins or until the top is crusty.

11- Remove from tins and cool. Slice and freeze in bags.
