Spaghetti Courgette with Creamy Avocado Sauce Recipe

serving for 1 

 1 large courgette - cut into thin strips, see below how to do this.

1 medium avocado

1/4 cup soaked cashew nuts - see my page on ‘’soaking’'

Juice of 1/2 lemon

1 tbsp olive oil

Handful mint leave

Himalayan salt and white pepper

Tomato quartered or Parmesan cheese or both

 

Method

1 - In a food processor blend till smooth,avocado, nuts, lemon juice, olive oil and mint leaves.

2 - Taste and season and more lemon juice if it needs it.

3 - Remove and gentle stir into the courgettes in a bowl.

4 - Serve and garnish with tomatoes if you like or parmesan cheese.

 

To spaghetti your courgettes you can either peel with a peeler and then slice or use a mandolin.
