Roast Balsamic Beef

Picture above is a large platter of Roast Balsamic Beef Cheeks, smashed potatoes with their skins on, roasted pumpkin and roasted brussel sprouts.

If you are going to have a lot of people over for dinner this is a great recipe for that. Everyone loves it. I have made this recipe so many times. I love Balsamic vinegar. Beef cheek is my favourite meat to use with this recipe. ( remember be creative and try something different ) although for a lot of people a large piece of beef would be best.

Roast Balsamic Beef Recipe

1 kg boneless roast beef, bolar roast, chuck or round roast, beef cheek

1/2 cup balsamic vinegar

2 cup beef stock - GF

2 tbsp honey

1 tbsp soy sauce- GF, organic Tamari

6 cloves garlic

Handful mushrooms  -option

Method

1 - In a fry pan, melt coconut oil and on high heat brown beef quickly.

2 - Place all the above ingredients in a crock pot or in a large roasting dish covered well with tin foil in the oven.

3 - Cook low for 3 - 6 hrs - until the meat easily falls apart. This depends on the size. Check regular, and add water if the liquid gets low.

4 - Remove the meat and pour the liquid into a large pot, scooping any fat off.

5 - Add mushrooms, simmer liquid with lid off, reducing it to half. You can then thicken it, if it needs it with some cornflour mixed with a little water.

Serve with mashed potatoes and vegetables.
