Below is how I freeze and preserve.
Buy lemons when they are on special. Squeeze the juice and zest them, then separately put them into ice cubes, freeze and then place in freezer bags. Label and date.
When I make pesto I freeze left overs and then place them into small freezer bags. Label and date.
Banana's. I know these don't look great but I buy my smoothie banana's on special when they are really ripe. Remove the skin and place into a freezer bag. Label and date.
I buy pineapple when they are on special. I usually buy a lot. I cut them all up into cubes ready for smoothies. Make sure you lay them flat in the freezer until they have frozen. Then they wont stick together. Label and date.
Preserving fruit without sugar. These nectarine's still have their stones in.
1 - Wash jars real well and place in an oven wet, at 100 c .
2 - Wash fruit, leave skin on and you can either spilt fruit in half and remove pulps or stones or leave them in. Remove any bruises or marks.
3 - Cover with water and bring to the boil be careful not to lose their shape.
4 - Place lids or seals into a small pot of water and bring to boil to sterilise.
5 - Place hot jars on to a wooden board or tea towel. Don't let the hot jars touch a cold surface, otherwise they will crack.
6 - Ladle the fruit and liquid into the jars, use a knife to remove any air bubbles. Don't let any fruit go above the liquid. Pour extra liquid into the jar, make sure the rim of the jars are clear of fruit.
7 - Place seal on top and then the screw band, pushing down on the seal as to do this.
8 - Cool and remove screw band. The seal should be sunk down, this means it is Preserved. If it is not you will need to redo the process again.
