Energy Balls - GF

Forget the coffee - Calling all mums. These wonderful balls of energy are just what you need, when you are feeling low. Protein gives you energy. Make these and hide them in the freezer. These are your treat for all the hard work you do.

Nutrients - high in fibre, protein, omega 3 fatty acids, and lignin's.

Almond Meal -  Almonds are a stone fruit.They are packed with protein, vitamin's E and B : magnesium, copper, potassium, phosphorus, iron, calcium and fibre.

Cacao ( this is not cocoa, see my page on chocolate)- Vitamin E, B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper, Selenium. I only ever buy this for my family as a drinking chocolate. It is basically raw chocolate powder with nothing taken away and nothing added.

Chia Seeds - Super powerful little seeds are loaded with protein, fat (mostly omega 3's),calcium, manganese, magnesium, phosphorus, and zinc, vitamin B3, potassium, vitamin B1 and B2.

Energy Balls Recipe

400 gr dried dates - soak in boiling water for 30 minutes and then drain off the liquid by place in a strainer.

400 gr ground almonds - almond meal

1/2 cup cocoa powder

option - 1/2 cup chia seeds / chopped almonds

coconut for rolling in

Method

1 - After soaking and draining your dates, place them in a food processor and blend until smooth.

2 - Add the cocoa (chia seeds) and almond meal. Blend until mixed. Scraping down a few times. Add more almond meal or cocoa if it is to stick.

3 - Using a tablespoon, roll into about 50 balls and then roll into coconut. 

Store in the fridge or freeze.
