Fish in a bag - GF

 

I love cooking this meal when I am in a hurry. Everyone has their own parcel.

You can add any vegetables but if they are hard ones precook them first. The bag is only in the oven for about 20 - 40 mins, and  everything must be cooked by then.

Fish in a Bag Recipe  

serves 1 adult

1 piece of boneless firm fish fillet - monk, salmon or ask your fish supplier

150 ml fish or vegetable stock

1 slice of lemon

1 lemon or my recipe for '' apple cider vinegar dressing '' which is with lemon juice.

90 gr couscous

1 small courgette - thinly sliced

Hand full spinach, thinly sliced

Tomato sliced

Capers

Wide tin, foil depending on the size of the fish.

Method

1 - Cut a large piece of tin foil and fold it in half. Roll the sides tightly to form a bag, leaving the top       open. Place on a oven tray.

2 - Pour in the couscous.

3 - Lay the courgette then the spinach on top.

4 - Pour in the stock and sea salt if your stock is unseasoned.

5 - Lay the fish on top, then the tomato, capers, lemon slice and lemon juice or dressing and season        the fish.

6 - Gently close the top to stop any steam escaping.

7 -  Cook on the tray for about 20 - 30 mins depending on the size of the fish.

You can open to check the fish.
