It was my daughter's birthday not long ago and she wanted a cake. She turned 24 so I warned her it would only be a healthy one. She laughed and left me to it.
Let me tell you all , this cake is amazing. Its rich and moist. I made two small cakes, the top one smaller. The icing is smooth and creamy.
When you bake with almond meal it is more expensive than plain flour BUT you only need a small piece of cake because it is soooooo rich.
When cooking with awesome ingredients you will learn its about Quality NOT quantity.
HEALTHY is Quality,( not quantity).
Cacao (not cocoa) is the purest form of chocolate you can eat. Cacao is raw, less processed and contains more nutrients because of its cocoa butter content.

Beetroot Chocolate Cake Recipe
(GF - but depends on your chocolate for icing)
2 cups almond meal (ground almonds)
3/4 cup coconut sugar - comes from the coconut flower
3/4 cup cacao
3 tsps baking powder
3/4 cup coconut oil
3 eggs, lightly beaten with a fork
1 medium raw beetroot, peeled and grated
Method
Preheat Oven 180 c
1 - Grease and line a small round cake tin with butter. I Sprinkle a little almond meal on the butter.
2 - Melt the coconut oil if it is solid.
3 - Add sugar to the oil and stir to dissolve.
4 - Mix cacao, almond meal and baking powder into a large bowl.
5 - Make a well in the centre and pour in coconut oil, mix eggs and grated beetroot.
6 - Fold all gently.
7 - Pour into tin.
8 - Bake for around 30 - 40 mins or more , stick a skewer into the middle , if it comes out clean it is cooked.
9 - LEAVE in TIN until cool, then tip out on a cooling tray.
10 - Ice when completely cooled.
Chocolate Icing Recipe
3/4 cup dark chocolate - 72 % or more cocoa
1/4 coconut cream
Method
1 - Melt chocolate in a metal, or glass bowl, over a pot of simmering water.
Do not let the water touch the base of the bowl.
2 - Once melted, pour in coconut cream and stir , until well mixed
5 - Pour over cooled cake.
