Spaghetti and Meat Balls with Beef Sauce -GF

GF if using GF Spaghetti and GF rolled oats 

Spaghetti and meatballs are usually made with a lot of tomatoes and tomato sauces. This can cause stomach problem's with the high acid tomatoes. (unless you are using low acid tomatoes).  This recipe does have some tomato sauce, but it has more of a true, beefy flavour.

If you are cooking for a lot of people I cook the meatballs in the oven. Then add them to the made up sauce. Below is a photo of me smoking the meatballs for about 5 minutes, I did not want to dry them out, after I had baked them. This gave them a richer flavour.

 

Spaghetti and Meat Balls with Beef Sauce Recipe

1 kg minced beef

3/4 quick cook rolled oats

1/4 cup mustard

1/4 cup homemade tomato sauce for the meatballs

1/4 cup  homemade tomato sauce for the main sauce

1/2 tsp Himalayan salt

1/2 tsp pepper

Coconut oil for frying

2 large onions halved then thinly sliced

4 1/2 cups beef stock   - see my page on '' Stocks and Sauces ''

1 tbsp balsamic vinegar

6 portabello  mushrooms sliced

4 tbsp cornflour or brown rice flour mixed with a little water

Packet dried or fresh spaghetti - or for gluten free use rice noodles or GF pasta

Method

1 - Mix minced beef, rolled oats, mustard, tomato sauce, salt and pepper.

2 - Roll into small balls.

3 - In a large, heavy pot, melt coconut oil and fry mince balls in small batches. Roll the pot around every now and then to stop them sticking to the base.

4 - After balls have been fried in the same pot add more oil (don’t clean pot) and add onions, fry with the lid on until soft.

5 - Add mushrooms and cook for 2 mins.

6 - Add stock, tomato sauce, and balsamic vinegar.

7 - Simmer for 10 mins then add cornflour mix, cook a little more.

8 - Cook your dried or fresh spaghetti as per instructions.

9 - Drain spaghetti and place into a large bowl and pour over the sauce and meat balls, mix and serve.

Below are photo's of a large amount of meatballs. I baked them in the oven and then smoked them for 5 minutes for flavour. 

They then went into the already prepared sauce.
