If you cannot eat gluten and are missing pancakes, here is an easy and quick recipe.
If you have never used coconut flour, here is your chance. It is very different from other flours, and absorbs liquid well. You do not use same about of coconut flour as you would with normal flour.
Coconut Flour Hot Cakes Recipe GF
1/4 cup coconut flour
1 cup milk or coconut milk
2 tsp vanilla extract
1/8 tsp baking soda
3 eggs
2 tbsp honey - option
1 banana - slice - option
1/2 tsp vanilla
Coconut oil for frying
Method
1 - In a bowl beat eggs until thick and creamy
2 - Beat in milk, vanilla
3 - In another bowl mix coconut flour and baking soda.
4 - Pour wet ingredients into the dry ingredients, fold together, trying not to lose the air.
Stir in the banana if you are using it.
5 - Heat a pan and melt coconut oil , then dropping in a large spoon full of batter.
6 - Turn over when base is brown and top is a little dry.
Careful not to burn.
