Delicious Cannellini Bean Soup - GF

Why would we not want to eat beans, when they are loaded with protein, vitamins, omega fatty acid 3 and 6, and minerals. 

They are so cheap to buy. Especially if you buy them dried. All you have to do is, soak them over night, then drain and simmer for 50 mins. I then freeze them.

Delicious Cannelloni Bean Soup Recipe  GF

1 large white onion chopped finely

2 large garlic cloves  smashed and chopped

2 sticks of organic celery ( celery is chemically sprayed a lot during its growth)

1 red capsicum diced -   

1/4 cup apple cider vinegar

2 large tbsp brown rice malt syrup or honey

1 tsp smoked paprika

800 gr chopped tomatoes

400 gr cooked cannelloni beans  see my page ''Soaking'' and then see the page on Cannelloni beans.

2 spicy sausages sliced into small pieces -  make sure you buy sausages preserved with salt only with no add colouring,  I like to buy my sausages from   Deep Creek Deli  

Coconut oil for frying

 

Method

1 -  In a large pot melt oil and fry sliced sausages and onion until brown.

3 -  Turn the heat down and add to the pot -  garlic, celery, capsicum, paprika, cook 3 mins with lid on.

4 - Add vinegar and honey with lid off reduce a little.

5 - Add tomatoes , bring to boil and then turn down and simmer for 20 mins with lid on. 

6 -  Add beans , taste and season.
