Chocolate Pudding - GF

When I was young my mum use to make this chocolate pudding. We loved it. It was alway silky smooth and creamy. But It was made with cocoa powder and whole milk.

 I have added home grown cooked pears to this, because I think chocolate and pears are an awesome match.

We love using coconut milk instead of milk.

Make sure you have read this recipe before you start, and all the ingredients are ready to go, because everything will happen very fast. 

This can be served warm (so make it just before serving ) or cold (cover top of pudding with plastic wrap to stop a skin forming )

Chocolate Pudding Recipe

2 cups  coconut milk or full-fat milk

1 tsp vanilla

4 tbsp honey

100 gr dark 80 %  chocolate - break up

1 egg yolk

100 gr cornflour / 6 tbsp milk

2 large pears, peel and quarter

Method

1 - Mix in a small bowl 6 tbsp milk with the cornflour, using your finger, I don't know why but It works.

2 - Mix in another small bowl, egg yolks, well with a fork

3 - Heat milk, honey, vanilla and chocolate gently, stirring until chocolate has melted, and it comes to the boil. Remove from heat.

4 - Using a whisk, beat hard and fast as you pour in the cornflour mix, now cook for 3 mins, still whisking.

5 - Take the pot off the heat, now whisk in the egg yolk.

6 - Pour straight into your dessert bowls, and cool  or serve

7 - Place pears into a pot with a small amount of water with the lid on. Simmer until tender.
