Courgette Fritters - GF

These fritters are tasty and filling. Some times we have them on a Friday night or a lunch. They are so quick to make. You can add cheese to them for extra protein if you want - feta is a good choice. 

Courgette Fritter Recipe

1large grated courgettes - place in a bowl with a teaspoon of sea salt, mix. This is to remove moisture.

2 egg beaten

1 onion chopped finely

1 clove garlic smashed and chopped

2 tsp cumin

handful parsley or spinach - chopped finely

1/4 cup gluten free flour or self raising flour

Himalayan salt

coconut oil for frying

Tomatoes halved 

Method

1 - Squeeze the courgette by hand, removing as much liquid as possible, then put it into a clean tea towel and twist, squeezing more liquid out, and then put it into a sieve, while you prepare the rest of the ingredients.

2 - In a fry pan melt coconut oil and fry gently the onion until soft.

3 - Add garlic and cumin, cook for 1 min on low

4 - In a large bowl mix together onion, garlic, egg, salt, parsley and courgette.

5 - Now add the rice flour and mix really well.

6 - Melt coconut oil in a fry pan and fry spoonfuls of mixture for a 1-2 mins on each side.

7 - When they are all cooked , fry tomato halves , season them.

8 - Serve the fritters with the tomatoes.
