Chocolate and Courgette Loaf

I have just been out to the vegetable garden to save all my courgettes. It snowed last night, first time for the season.

It is really important to use young courgettes. The older they are the more moisture there is in them and you dont want that.

Here is a delicious loaf made with courgettes. It is very moist and serves great as an afternoon treat with a herbal tea.

Chocolate and Courgette Loaf Recipe

1 1/2 cup small grated courgettes - add 1 tsp salt to it and mix. leave for 10 mins. This will help remove the liquid. Then squeeze by hand the liquid. Next place the courgettes in a clean tea towel, and squeeze more liquid out.

1 cup flour

1/2 cup cacao 

1 tsp baking soda

1/4 tsp baking powder

1 tsp cinnamon

1/2 cup brown rice malt syrup or honey

2 eggs - beaten

1 tsp vanilla

1/2 cup coconut oil - if you are melting this make sure it cools 

 

Method - oven 180 c

1 - Place a piece of grease proof paper in a loaf tin.

2 -  Mix in a large bowl the flour, cacao, baking soda, baking powder and  cinnamon

3 - Mix in a small bowl honey, eggs, vanilla and coconut oil

4 - Pour the wet ingredients into the dry ingredients, mix well.

5 - Pour into the lined tin. Bake for 50 - 60 mins , poke a skewer into the middle to see if it comes out clean.
