Water Kefir - Summer Drink

Water Kefir - Probiotic in a glass. (good bacteria) This grain is a translucent gelatinous, and is comprised of a bacteria including lactobacillus hilgardite.  These grains multiply and you can share them with your friends.

A healthy gut is so important for your over all health. Signs of sickness are usually a sign of, an unhealthy gut. 

Yes, It does have sugar add to it. But - the kefir consumes the sugar, the end result is not a sugary drink. The sugar is needed, for fermentation, (don't use coconut sugar) resulting in beneficial acids, B vitamins and food enzymes. 

Don't allow metal to come into contact with the kefir.

This drink is 0.9% alcohol - because of the sugar fermenting.

 

Recipe -

Water Kefir grains are white. Use glass bottles and jars for the Kefir and don't allow metal to contact it.

Place 3 tbsp of the grains ( I use more than that ) in a preserving jar with 1/4 cup brown sugar and fresh water not quite to the top of the jar.

Cover jar with piece of muslin cloth and leave in a warm place out of the sun on a bench for up to 3 days. The grains will feed on the sugar and produce carbon dioxide. So you will see bubbles appearing. This is a good sign.

Next stain the kefir water into glass bottles through a funnel with a piece of muslin cloth inside it, leaving at least 1 cup of liquid with the grains.

Now flavour your kefir water with berries or fresh ginger and lemon, herb tea bag or any other flavouring. I also add a sultana to help will more fizz.

Place a lid on the jars and leave on the bench, in a warm place for 2 - 3 days until the taste is right for you. During this time bubbles will apart, the longer you leave it the more fizzy it will get. BE CAREFUL it could explode. 

Once ready place in the fridge, this will now stop the drink fermenting more. This keeps for up to 1 week.

Wash your jar with hot water (don't use soap) place the kefir grains back in with sugar/water. Start the process again. The Kefir grains will produce more and you can share them.

 

Serve to your family and guest's with ice and slices of lemon or fresh berries. They will love it. It is refreshing a cheap to make.
