If you have had coleslaw all your life with mayonnaise then it is time for a change. This truly is a refreshing and healthy salad. You will love it.
Asian Coleslaw Recipe
1/2 medium-size green cabbage - sliced finely
1/2 medium-size red cabbage - sliced finely
1/2 red onion - sliced finely
1 cucumber - sliced thinly and then in small cubes
2 grated carrots
2 spring onions - sliced thinly
1 bunch of cilantro rip up and added at the end
Option - roasted peanuts
2 tbsp toasted sesame seeds - white and black or either. Toast in a dry fry pan on medium high, moving seeds around until lightly colour - Don't walk away while toasting.
Dressing
2 tbsp olive oil
2 tbsp sesame oil
4 tbsp Tamari sauce - naturally fermented and gluten free soya sauce
2 tbsp rice vinegar
3 tbsp brown rice malt vinegar or honey
2 tbsp fresh ginger
2 tbsp lemon juice or apple cider vinegar
Method
1 - Mix together - cabbages, carrots, cucumber, spring onions and red onion. Cover and place in fridge until ready to serve.
2 - Mix the dressing together and just before serving add to the salad, including the cilantro and sesame seeds.
