Balela Salad - GF

This is a middle Eastern salad. High in Nutrients because of the chickpeas, black beans and apple cider vinegar ( this vinegar turns into an alkaline once digested.)

Chickpea's -

Nutrients - Gluten free and a high source of protein, fibre, Iron, vitamin B6 and Magnesium.

Black Beans - 

The cheapest way to buy chickpeas  and black beans is dried.

1 - Soak dried both in separate bowls overnight in a large bowl of water. ( make sure the water level is way above them as the will soak up a lot of water )

2 - drain of water, place into a large pot and cover with fresh water. Simmer for about 50 mins or until tender. Drain and cool. 

3 - Measure out what you need and place the rest into freezer bags for next time.

You can buy these cooked in tins but it is more expensive.

Lay flat in the freezer until frozen, then they won't stick together.

 

Balela Salad Recipe

450 gr cooked black beans 

450 gr cooked chickpea's 

1/2 cup fresh coriander or mint leaves

1/2 cup fresh parsley

1/2 cup red onion - finely diced

1 cup cherry tomatoes - halved

Method

1 - Mix altogether and add enough dressing for flavour.

Apple Cider Vinegar Dressing Recipe

This dressing makes more than you need, keep it in the fridge for up to 2 weeks and use it on other salads. I have removed the 2 tsps of mustard for this recipe.

2/3 cup mild flavour  extra virgin olive oil

1 clove garlic , smashed and chopped

4 tbsp honey or brown rice malt syrup

1/2 tsp sea salt

1 lemon juice

1/2 cup Apple Cider Vinegar 

Method

1 - Combine all ingredients in a jar and shake.

Mix your cooked chickpea's and black beans together.

Add herbs, red onion and tomatoes.

Now stir in your dressing, taste and season more if it needs it.

Serve warm or cold.
