Feta,Yogurt and Herb Dip

This is the dip that I love to use with a roast vegetable salad. It is creamy and full of flavour.

Feta and Yogurt Herb Dip Recipe

100 gr goats or cows feta - you can also us a small amount of creamy blue cheese in this measurement.

200 grms unsweetened thick yogurt or sour cream - I used yogurt

1 clove garlic - this is an option, I did not use it because I add a small amount of blue cheese, this was enough flavour.

A small bunch of fresh herbs - I used parsley, chives and sage or tsp dried mixed herbs.

Method

1 - Place in a blender and blend until smooth, remove and place in a bowl.

Taste and add salt if you need to but the feta will be salty enough.

Feta, yogurt or sour cream and herbs.

Blend

Place in a bowl and garnish with a herb.

Here is some other option's for meal, using this feta dip.

Slit the chicken breast in half, but not right through. Spoon in some dip.

Remove skin if you want to and coat with either - seasoned -  rice flour, ground almonds or plain flour.

Dip in seasoned egg mix.

Dip in bread crumbs.

Fry in coconut oil of bake in the oven - until just cooked, this is easy to over cook.

OR  - You could place on a pizza with chicken and cook it.
