Christmas Time coming up and traditionally Truffles are made, but I find they are very sweet. This is my version of a Christmas truffles. This recipe is gluten free (as long as you buy rolled oats made in a gluten free environment if you are celiac, but rolled oats are GF.) there is no processed sugar added just natural sugars unless you are dipping the truffles in dark chocolate.
Prune and Nut Truffle Recipe
makes 40
290 gr rolled oats
500 gr prunes
1 cup peanut butter or almond butter
1 cup pumpkin seeds
1 cup coconut
150 gr 72 % chocolate, I only dipped half of each ball, if you want to dip the whole ball you will need more chocolate.
Method
1 - Mix all except the chocolate together. Place half or less in and large blender or a food processor. Blend. Continue until the mixture is all blended. If it does not roll into balls easily add more nut butter.
2 - Roll into balls.
3 - Melt chocolate in a bowl over a pot of simmering water. Dip half the balls into the chocolate.
Enjoy
Place all but the chocolate into your food processor or large blender.
Blend and scrape down.
Once blended roll a small amount into a ball and if it holds together thats good, if it does not just add a little more nut butter.
Keep rolling
Rolled without coating them in chocolate.
These Truffles have been half dipped in chocolate and sprinkled with icing sugar, just for decoration before serving.
You can freeze them and pulled out in time for a special day.
