Home-made corn fritters for a light lunch is the best. The option of gluten free and no added process sugar, flavoured with fresh herbs and light and fluffy, because of the beaten egg whites.
Sweetcorn Fritter Recipe
makes 8
440 gr whole corn from a tin or sliced off fresh corn cobs
2 egg yolks
2 egg whites, beaten till stiff
2 tbsp rice flour
2 tbsp fresh herbs chopped - I used parsley and chives.
sea salt and pepper
coconut oil for frying
Method
1 - Stir into the corn, rice flour, herbs and seasoning.
2 - Stir in the egg yolks.
3 - Fold in the beaten egg whites.
4 - Heat oil in a fry pan and fry spoonfuls on medium for about 3 minutes, see photo's below.
5 - Turn over and fry for another 3 minutes or until cooked.
Beat egg whites until they form a peak.
Mix in the flour, herbs and seasoning.
Stir in the egg yolks.
Fold gently in the beaten egg whites.
Fry in a little oil on each side. These fritters are very light so be gentle with them.
