It was Glenn's birthday and going out for dinner to a restaurant is not his favourite way to celebrate. He loves picnic's so our girls decided we would all go to our local lake and eat dinner. It was so much fun, everyone really enjoyed themselves. The picture above, is a burger using a gluten free Turkish bun eaten with mayonnaise, lettuce, tomato and sauerkraut and blue cheese.
Turkish Kofta Recipe
Makes about 16 - these can be frozen before or after cooking.
1 kg lamb mince or you can us beef.
1 cup organic fine rolled oats
1 tsp sea salt
1 tsp pepper
2 tsp ground cumin
1 tsp allspice
handful fresh mint or 2 tbsp dried herbs
handful fresh parsley - chopped
2 cloves garlic chopped finely
Method
1 - Place all ingredients in a bowl and mix.
2 - Roll into even size logs.
3 - Bake in an oven at 200c for about 20 minutes or until just cooked. You can fry them instead but this recipe makes a lot and it is easier to bake.
I used fresh herbs because I have plenty of them. I used beef mince, this is not the tradional way, lamb mince is normally used.
Place everything in a bowl and mix.
Roll into logs
I baked them in my oven because there was so many.
Time for a family picnic dinner down at Lake Wakatipu in Queenstown.
