Baked Tortilla Chips and Refried Beans - GF

For a meatless meal here is a great one. Make it for your family without telling them its beans and serve. They will love it. It is really filling, the meal above is really for two sharing.

Black Beans -  High in protein, calcium, Iron, fibre and has folate, Omega 3 and 6.

Baked Tortilla Chips and Refried Beans Recipe

Tortilla chips - If you are making them go to my recipe under ''snacks'' and you will find an easy recipe using Masa Harina Flour (bought from the super marker)and natural flavouring. I have added more flavouring here - turmeric and smoked paprika - to give more colour.

Refried Beans Recipe

serves 3 - 4 with a side salad.

500 grms cooked black beans  or pinto beans can be used -

If buying dried beans - soak overnight, strain and then cover with fresh water, simmer for about 20 mins, until tender then drain.

2 tbsp cumin powder

 2 cups stock - vegetable stock - homemade is best, see my page on Stocks and Sauces

1 tsp sea salt/ pepper - if your stock has not been seasoned.

Topping

Grated cheese

Avocado

Sour cream

Smoked paprika to sprinkle at the end

 

Method

1 - In a large pot, add beans, cumin, and stock.

2 - Cook on low, mashing them with a potato masher, as the stock heats up. Mash until it starts to thicken, stirring with a wooden spoon every now and then until thicker.

3 - Taste, and season 

Assembling

1 - Place the chips on a plate, drop the refried beans over the chips, then sprinkle the cheese over it and place under the grill.

2 - Place a large spoonful in the middle of the sour cream and slices of avocado.

3 - Sprinkle some smoked paprika on top and serve.

 

Place the cooked beans, cumin and stock in a pot and cook on low mashing the beans as it heats up.

Once most of the beans are mash stir every now and then with a wooden spoon until the liquid has mostly gone and it is thick.

These tortilla chips have had more natural colouring added to it for a brighter colour.

Place some of the beans on top, then sprinkle grated cheese and place under the grill.

Top with sour cream and avocado. Serve with salad. I have made a coleslaw.
