This salad is a full meal. You do not have to use meat or feta but it goes nicely with the smoked paprika dressing. There is a big difference in taste between roasting a red pepper and a raw red pepper. The smoked red pepper has become flavoured with its natural rich oil once the skin has been removed.
Risoni Roasted Red Pepper Salad Recipe
200 gr risoni
2 litre water
Himalayan salt
2 red peppers - leave whole for roasting
2 tomatoes - cubed
1/2 cucumber - cubed
1/2 red onion - cubed finely
125 gr Feta - cows or goats - cubed - option
Fresh herbs - chives, parsley, sage, thyme etc - chopped
Sausages - I used beef and whitestone blue cheese Sausages from ''Neat Meat'' my local butcher - fried and sliced into small pieces
Dressing
2 tbsp red wine vinegar
2 tbsp olive oil
1 tbsp brown rice malt syrup or any other sweetener
1 tbsp smoked paprika
Method
1 - Mix all the dressing ingredients in a jar and put aside.
2 - Bring to boil the stock and salt in a large pot, slowly pour in the risoni, stirring. Cook for 8 - 10 minutes or until cooked stirring every now and then. Drain and rinse in fresh warm water.
3 - Place the red peppers under a grill or over a gas element to burn all over, turning as it goes black.
4 - Place chard peppers in a bowl and cover with glad wrap and let them sweat and the skin goes soft.
5 - Remove the chard skin, do not rinse under water otherwise you will remove the natural oils.
6 - Cut in half and remove the seeds and slice in strips.
7 - Fry the sausages and then slice into small pieces.
8 - Place all ingredients into a bowl, including the dressing and serve.
Bring the water and salt to the boil and then slowly pour in the Risoni, stirring. Once cooked drain and rinse.
Grill or place on a gas burner and char the pepper all over. Place in a bowl and cover with plastic wrap.
Remove the black skin and open it up to remove the stem and seeds. Slice
Make up your dressing and and have all the ingredients ready.
I picked chives, sage, parsley and mint from my garden and chopped them together.
If you are using sausages fry and slice them.
Mix altogether and serve.
